Food trip in Buglasan

The Provincial Agriculture Office had their 10th Lutong Garbo, one of the events in Buglasan Festival, yesterday Oct. 17 at PAO Multipurpose hall. The feast served 16 different recipes and delicacies from different towns of the province.

According to Sylvia Uy, chair committee of the event, that “[this] festival aims to promote Negros Oriental’s native cuisines in celebration with Buglasan Festival that showcases what the province has to offer to the tourists.”

The recipe entries for the culinary contest are the following:

Tinapanang pasayan sa ohonh with papaya chili sauce of Tanjay city, Crab chipunaw with vegetables of Sta. Catalina, Moringa patty in hot squash sauce of Ayungon, Ginataang manok with mushroom and gulay of Valencia, Laing con carne ala Negros of Pamplona, Chicken squash of Manjuyod, Chicken ‘n veggies of Canlaon city, Kabibutong meatballs of Jimamalud, Tinunuang hito of San Jose, Crustacea ala takway of Sibulan, 3g of Amlan, Spicy steamed fish of Bindoy, KKK meatless patyy with k sauce of Bindoy, Adobong talabasa sa lunok of Bais, Ginataang tuna sa gabi, buko at pechay Dumaguete city, Cassava grated with shrimp of Zamboangita

The entries for this contest are chosen by the mayors of Negros Oriental.

The criteria for judging represented by Uy was consist of the following: using of artificial seasonings are not allowed, the contestant must prepare dishes that features ingredients indigenous to the area represented; the participants must wear appropriate white cooking attire with hair bonnet and must provide his own utensils.

The contestants were given 30 minutes to prepare, marinate and set up ingredients and an hour to cook and present their dishes.

The food was judged according to this criteria: 30% palatability, 40% originality, 10% texture, 10% dish presentation and 10% for the cost of the dish.

The winners received trophies and an additional cash prize worth 10,000 pesos for the 1st placer, 7,000 pesos for the 2nd and 5,000 pesos for the 3rd. The participants who did not make to the top three received a consolation prize worth 2,500 pesos and certificates of appreciation form Lutong Garbo committee.
