First, marinate your meat the night before.
Before you begin heating the grill, brush it or spray it with a little vegetable oil to prevent food from sticking.
Put more than enough coal in the grill and fire it up together. You wouldn’t want to run out of coal in the middle of grilling.
Brush barbecue sauce over the meat as you grill. That way the meat remains tender and soaks in the flavor of the sauce.
Remove all residues with a wire brush right after you finish cooking while the grate is still hot, that way you prevent some of the scrapings from falling into the flames and causing a flare-up the next time you grill.
